A. Services to Whitsitt shall be cafeteria style service meals served by the Contractor’s employees in the cafeteria serving area adjoining the kitchen. Contractor will provide all plastic ware and paper products including serving bowls, plates, trays, and cups as approved by the Contract Monitor for Whitsitt for the duration of the Contract. The Contractor shall be responsible for cleaning and sanitation of all flatware. Flatware shall be maintained in an acceptable condition at all times, free of cracks, chipping, paint, stains, or other conditions unacceptable under State of Maryland Regulations COMAR 10.15.03 Food Service Facilities. B. The Contractor shall be responsible for cleaning the service area and kitchen daily, as well as for cleaning and sanitizing of all pans, trays, plates, and utensils utilized by the food service operation and for removing of trash. The Contractor will monitor the contents in the refrigerator for outdated stored bag meals and milk to discard as needed.
