The specifications contained herein are intended to cover the furnishing and delivery of commercial and commodity products for special dietary needs and with global flavors to Montgomery County Public Schools (MCPS) Department of Food and Nutrition Services (DFNS) Warehouse, located in Gaithersburg, Maryland. The goal of this IFB is to expand offerings from DFNS to meet the evolving preference of MCPS students for more globally inspired dishes and allergen free options in the cafeteria. Allergen friendly will be defined as a product free from one or more of the nine major allergens, as defined by the Food and Drug Administration. DFNS also desires to increase the offerings of locally sourced products on menus and certain specifications in this IFB may include a preference for local. Local will be defined first within the state of Maryland and then the states of Virginia, West Virginia, Pennsylvania, New Jersey, Delaware and North Carolina. Specifications include, but are not limited to: 500 Case: Traditional pocket sandwich which contains ingredients that are allergen friendly. Par-baked and shipped frozen and ready to heat. Meal should be free of soy, and one or more of the other top nine allergens. Soy free means no soy flour, soy protein, soybean oil, soy lecithin and other soy derived ingredients. Single serving. Must meet Child Nutrition Requirements for one serving providing 2 oz Meat/Meat Alternate and 2 oz eq Grain; Estimated quantity based on 100/case. Individually packaged allergen friendly meal. Delivered frozen in an ovenable sealed container. Ready to heat and serve. Open to various flavor profiles and combinations to include chicken, beef, pasta or grains. No seafood or pork.
