Specifications include, but are not limited to: Contractor will provide the following: 1. Nutritionally balance jail tested menu developed by registered dietitians specifically for the needs of the Kenton County Detention Center. 2. Menu that will meet or exceed nutritional requirements as specified by established jail standards, and in comparison to other correctional institutions with a minimum of 2,600 calories per day for adults. Proposal response to include Master Menu cycle for four (4) weeks and a nutritional analysis of the nutritional analysis of the menu. Menu must include all portions, sizes and designate them as cooked or raw weight. The County recommends our current menu to be used as a mandatory menu. 3. Special medical and religious diets at no additional charge as approved by medical and administrative staff. 4. Special Holiday meals at Thanksgiving and Christmas
