Specifications include, but are not limited to: 1. Ground Beef (80-20), (spec. #136) Shall consist of fresh or frozen boneless, skeletal muscle tissue from utility or better grade of beef without the addition of fat and shall not contain added water, binders, or extenders. Shall exclude all off fall products from head, neck and cavity of the animal. Fat content shall not exceed 20% by laboratory analysis. This may be checked periodically. Packaged in 10 lb. units. 2. Ground Beef Patties, formed. Must meet specifications of item #3 except loosely pressed "Homestyle" or "Natural" into 6 patties per pound in accordance with good commercial practice. Patties will be flash frozen, IQF. 3. 'Thick 'n Juicy' Patties, 4/1, 80/20 Grd. Beef Patties, IQF, Must meet specifications of #3, Loose press into 4 patties per pound, 10# box.
