Cool down temperatures must have a 2-stage hot-food cooling, as well as 1-stage hot-food cooling and roomtemp food cooling. Thermocouple probe must be connected to handheld temperature device and must be durable (impact resistant), easy to clean, and easily calibrated. Thermocouple probe must be wired not wireless. Thermocouple probe must be easily replaced if damaged and must have an accuracy range of +- 1.0-degree F. Temperature device must be rechargeable and/or battery operated. Temperature device must be able to connect to computer via USB, to upload or sync temperatures to the internet. Device memory must store > 7,000 events before requiring upload of data to software application.
