3.1 Prepared meals must be served in the BAC cafeteria in a self-service buffet, except for items served in individual containers. 3.2 Food must be fresh and prepared on the day it is served, and the contractor must allow BAC contract supervisors to conduct regular inspections of the production site. 3.3 Meals must be served from Monday to Thursday, from 11:45 AM to 1:45 PM, with possible slight variations in schedules and provision on Fridays, as needed by BAC, which must be communicated to the contractor at least 48 hours in advance. 3.3.1 When the meal is a collation-type, the service times may vary between 9:00 AM and 4:00 PM, as needed by BAC, which must be communicated to the contractor at least 48 hours in advance 3.4 BAC will send, by the Friday of the previous week, a preview of the diners who will have lunch the following week, so that the amount to be paid will be calculated according to the quantity reported for each day. 3.5 The expected average is 50 meals per day, with possible variations up to a minimum of 20 for buffet setup. If the quantity is less than 20, the food may be provided in individual disposable lunch boxes. 3.6 Approximately 14 meals should be provided daily in disposable lunch boxes with lids, appropriate for this purpose, in accordance with local regulations, with some of them being delivered directly to the office located at 3006 Massachusetts Ave NW, Washington, DC 20008. 3.7 The Hot food served in the BAC’s cafeteria must be placed in suitable containers to maintain their quality and food safety (chafing dishes), to be provided by the contractor. 3.8 The quantity of food to be provided must meet the following minimum values per person, considering the weight after preparation: 3.8.1 For standard and executive meals: a. Meats: 250g (0.55lb), boneless; b. Side dishes: 400g (0.88lb); c. Salad: 100g (0.22lb); d. Dessert: 85g (0.188lb); e. Drinks: 300ml (10oz). 3.8.2 For collation-type meals: a. Drinks: 600ml (20oz); b. Savory options: 500g (1.1lb); c. Sweet options: 200g (0.44lb); d. Healthy options: 100g (0.22lb).
