Specifications include, but are not limited to: Beef, Ground Bulk; 100% ground beef. No cereal products; no soy products (i.e. textured vegetable protein); no MSG. No bones. Meat from head, tongue, heart glands, esophagus, etc., is unacceptable. Addition of straight fat is unacceptable. Fat to be ground from physically connected meat/fat at a 50/50 ration with finished product not to exceed 20% total fat content. Final grind using a 1/8” plate/blade. Ground beef shall not be mixed after final grinding. Boneless meat, not to exceed 50 degrees in grinding & packaging. No binders. Addition of extenders, dyes, water, or ice is prohibited. Bulk pack in 2-5lb or 1-10lb polyethylene bags; 10lb. Flat case; IMPS 137; MBG 137. FROZEN.
