Specifications include, but are not limited to: a. Provide meals that comply with or exceed the CACFP requirements for students’ nutritional needs set by the USDA and the Head Start Program Performance Standards (45 C.F.R. 1304.23 (b)(1)-(2) and (c)(1)-(4)). (See Attachment B, Meal Pattern for Older Children). b. Provide culturally diverse food a minimum of once per month. c. Provide a vegetarian meal once per week. d. Provide meal substitutions for medically based diets (allergies and intolerances) upon physician documented-approval e.g., juice, soy or lactose free milk for cow’s milk. In addition, provide substitutions for soy, wheat, and gluten products, etc. If a meal alternative is not provided by the Contractor, PSD will bill Contractor for meals purchased at the CACFP reimbursement rate. e. Provide meal substitutions for religious/ethnic preferences and pork-free meals when required per stated family request e.g., chicken or beef for pork, etc. f. Provide nut-free products.
