Contractor shall provide a Meal Rethermalization System for an advanced delivery system designed for use in a healthcare environment, compatible with insulated meal delivery carts, and capable of maintaining appropriate food temperature for resident safety and satisfaction. Contractor shall state the proposed brand and model on the Official Bid Price Sheet. A. Technical Requirements and Product Specifications 1. The Meal Rethermalization System must include but not be limited to the following as approved by the AHC: a. Brand/Model: Aladdin Mini CR3C24 or AHC approved equivalent. b. Accommodate a minimum of twenty-four (24) standard meal service trays. c. Be compliant with the Arkansas Department of Health Hospital Food Service Regulations, Federal Drug Administration (FDA) Food Code 2022, National Sanitation Foundation (NSF)/ American National Standards Institute (ANSI), Standard 4 for Commercial Cooking, Rethermalization, and Holding Equipment, and Occupational Health and Safety Administration (OSHA) workplace standards. d. Comply with the Arkansas State Fire Marshal’s requirements for hospital kitchen equipment. e. Contain Underwriters Laboratories (UL)-listed electrical components and National Sanitation Foundation (NSF)-certified for food service use. f. Air temperature in hot chamber of cart must be able to retherm food to > 165 degrees in 45-60 minutes with a full load of meals from 40 degree starting temp in retherm mode. g. Cold food items for a full load of meals must be below 41°F at the end of the rethermalization cycle. h. Cold food temperatures must pull down from 50°F to 40°F or below in 45 minutes with a full load of meals and the docking station in chilling mode. i. System must be capable of holding overnight for sixteen (16) hours in chill mode with heating systems designed to achieve performance specifications. j. Independent hot and cold zones must be present to preserve integrity of each meal component. k. System must have automatic shut-off at end of cycle, and over-temperature protection. l. System must have built-in temperature sensors with digital display and continuous monitoring.
