Specifications include, but are not limited to: The University of North Dakota is requesting proposals for licensed national food brands. The University is seeking proposals for licensed food operations within two campus buildings, the Memorial Union and University Place. All proposed brands should have a continued wide appeal on a national and regional level. The anchor brands are expected to drive traffic in the buildings. The brands should be seen as a “draw” to encourage the campus community to utilize the spaces within the designated buildings. Demonstrated appeal should include sales growth as a company and same store sales growth. Memorial Union location: 1. The University is seeking national brands to anchor the food options in the food court. Food offerings should include a wide array of offerings, from grilled, fried, baked, cold and heathy options. Offerings in the food court will include a sub sandwich deli, pizza, grill, international/ethnic & chicken. 2. The University is seeking a national coffee brand to anchor the coffee shop in the student union. The selected brand should have a full array of coffee shop offerings, blended coffee drinks, espresso, iced coffee, and a variety of food items to augment coffee sales. University Place 1. The University is seeking a national brand to anchor the retail food options outside of the student union on the west end of campus. Offerings should include a nationally recognized coffee brand with a variety of sandwiches and food offerings to supplement coffee sales. Offerings should include a nationally/regionally recognized coffee brand co-branded with a nationally/regionally recognized brand serving a variety of sandwiches and food offerings to supplement coffee sales
