Specifications include, but are not limited to: 1.White BreadShall be pan-baked using the standard sponge-dough batch method of bread baking. Enrichment tablets may be used in accordance with standards of the Pure Food and Drug Administration. Enrichment ingredients shall be evenly distributed in the finished product. The enrichment ingredients must be added to the flour, the dough, or both. The loaf shall be uniformly sliced, each slice to exactly seven-sixteenth (7/16”) inch in thickness and being a minimum of 25 grams or .9 oz. 2.Wheat BreadShall be pan-baked using the standard dough batch method of bread baking. Enrichment tablets may be used in accordance with standards of the Pure Food and Drug Administration. Enrichment ingredients must be evenly distributed in the finished product. The enrichment ingredients must be added to the flour, the dough, or both. The Wheat Bread shall consist of a ratio of approximately 60% white bread flour and 40% whole wheat flour, the exact proportion to be determined by the Bidder. The loaf shall be uniformly sliced, each slice to be exactly seven-sixteenth (7/16”) inch in thickness and be a minimum of 25 grams or .9 oz. 3.Rye BreadShall be pan-baked using the standard dough batch method of bread baking. Enrichment tablets may be used in accordance with standards of the Pure Food and Drug Administration. Enrichment ingredients must be evenly distributed in the finished product. The enrichment ingredients must be added to the flour, the dough, or both. The loaf shall be uniformly sliced, each slice to be exactly seven-sixteenth (7/16”) in thickness and be a minimum of 25 gram or .9 oz. 4.Italian Style Bread - MINIMUM PER SLICE WEIGHT 1 OZ OR 28 GRAMS 14 oz, 15 oz, 18 ozShall be baked directly on oven surface or on perforated sheet pans, using the standard sponge-dough batch method. The loaf shall be machine or hand formed to a shape and length commonly used in the industry. Each loaf shall be individually packaged and sealed. One (1) slice shall be 28 grams or 1.0 oz 5.Hamburger Rolls - MINIMUM PER ROLL WEIGHT 1.6OZ OR 44.6 GRAMSShall be pan-baked directly on the oven surface or on perforated sheet pans or in molds being uniform in diameter. Each roll shall be partially slit open into halves approximately uniform in thickness. Minimum of 50 grams or 1.8 oz.
