Specifications include, but are not limited to: 1.An on-site Administrator who has no less than three (3) years correctional food service knowledge and supervisory/managerial experience in administering a large-scale institutional program. a.Shall be responsible for directing and managing the administrative requirements to ensure a quality and nutritional food service program. The Administrator assigned shall be subject to review by YDS. b.Shall be responsible for the training juveniles as part of a vocational program, including, but not limited to the following: food preparation, food distribution, utensil cleaning, and kitchen sanitation. c.The Contractor shall not remove or reassign the on-site Administrator from the facility for a minimum period of one (1) year, without the advance written approval of YDS. 2.Daily statistical reports shall be provided as specified by YDS and shall include, but not be limited to: a.Regular meals served each day. b.Special meals served each day 3.Monthly statistics shall be submitted on the fifth working day of each month to the Director or designee, including all data reflecting each month’s workload and shall include, but not be limited to: a.Number and type of meals served. b.Number of special diets served.
