Specifications include, but are not limited to: DOC is seeking a single Vendor to provide a facility and staff to provide approximately 1500 meals while the kitchen facility is under construction. Vendor will need to provide the Following: Kitchen storage area for food products . Bidder must provide a kitchen prepping area for one hot meal for the lunch meal and a sack meal for the dinner. . Bidder must provide staffing to prepare two meals, per day, for approximately 1,500 individuals. . Both meals must be ready for transport no later than 10:00 am so the first meal can be served by 11:00 am. . Bidder must provide a kitchen prepping for a cold sack meal (sandwich making, adding side to sack, assembly line type process).
