Specifications include, but are not limited to: The Winnebago County Sheriff is requesting proposals for the provisions of furnishing food service for inmates seven days per week for daily population of approximately 850 inmates and 50 Juvenile Detention Center (JDC) detainees. 1. To deliver high quality food service that can be audited against established nutritional health standards. 2. To operate the food service program using correction experienced and professionally trained personnel. 3. To operate the food service program in a cost effective manner with full reporting to the Winnebago County Sheriff. 4. To implement a written food service plan with clear objectives, policies, procedures and annual evaluation of compliance. 5. To maintain standards established by the Winnebago County Sheriff as well as American Correctional Association, State and Federal Correctional Food Service Standards. 6. To offer a comprehensive program for continuing staff and inmate education. 7. To operate the food service program in a humane manner with respect to the inmate is right to basic health and nutritional standards. 8. To provide JDC with healthy meals which meet or exceed juvenile standards as set forth by the Illinois Department of Juvenile Justice and the National School Breakfast and Lunch Program.
