Specifications include, but are not limited to: All products must have at least 10 day shelf life from the time of delivery to the schools. All Fortified Lowfat Milk furnished and delivered to the DCSD shall meet the following requirements: 1. Grade “A” 2. Pasteurized and homogenized 3. 1% butterfat 4. Not less than 8.25% milk solids 5. Vitamin A and vitamin D enriched All Fortified Flavored and Fat Free Milk furnished and delivered to the DCSD shall meet the following requirements: 1. Grade “A” 2. Pasteurized 3. 0.5% butterfat or less 4. Not less than 8.25% milk solids 5. Vitamin A and Vitamin D enriched 6. Flavored with chocolate or cocoa, vanilla, strawberry 7. Containing no artificial sweeteners All Fortified Buttermilk furnished and delivered to the DCSD shall meet the following requirements: 1. Grade “A” 2. Pasteurized and homogenized 3. 0.5% butterfat or less 4. Not less than 8.25% milk solids 5. Churn-style All Lowfat Cottage Cheese furnished and delivered to the DCSD shall meet the following requirements: 1. Grade “A” 2. Pasteurized and homogenized 3. 0.5% butterfat or less 4. Creamed cottage cheese 5. Shall be mixed with one or more of the following pasteurized products or a pasteurized mixture of two or more of them: cream, milk, skim milk, concentrated milk, dried milk, concentrated skim milk, nonfat dry milk solids, or other constituents derived from milks mixed with water. Such cream, product or mixture must be used in such a quantity that the milk fat added is not less than one percent (1%) by weight of the finished creamed cottage cheese. 6. Finished creamed cottage cheese shall contain no more than 80% moisture 7. Shall be packed in five (5) pound cartons
