Specifications include, but are not limited to: Meals: The successful Proposer shall provide and serve approximately 496,000 meals over a twelve (12) month period to inmates and security-shift detention personnel. This number includes three meals per day Monday through Friday (382,536 meals), and two meals per day on Saturdays, Sundays and Holidays (112,896 meals) (hot breakfast and dinner) per inmate. This meal projection is based on an ADP of 450 inmates, with approximately 68 trusty 1.5 portion meals and 20 officer meals. The weekend and holiday meal schedule of two meals per-day will have increased portions such that the two meals will provide the equivalent caloric and nutritional value of three meals. 7.2 Hours: The successful Proposer will serve breakfast between 6:00 a.m. and 7:00 a.m., lunch between 11: a.m. and 12:00 p.m. and dinner will be served between 4:30 p.m. and 5:30 p.m. The weekend and Holiday meal schedule will be negotiated, but there will never be more than a 14 hour time period between any two meals. 7.3 Method of Service: The successful Proposer will continue the decentralized feeding method now in use.
