Specifications include, but are not limited to: All fresh produce shall be of the type, style, grade, and pack according to the individual item requirements as stated in the enclosed specifications. Each produce item delivered in the same week must be same size, weight, and source of origin for all schools. Example: 125 count golden delicious apples-all golden delicious apples delivered in a week must be same pack size (125), from the same point of origin, and same packer. All produce must be clearly marked with a pack date or an expiration date. All produce must have a guaranteed shelf life of 10 days except fresh apple slices which must be received with a shelf life of 20 days past the pack date. All fresh produce shall be kept in the proper state of refrigeration for each item at all times. All fresh produce shall be handled in accordance with the best commercial practice. All fresh produce shall be in good condition, and free from defect such as over-ripe, decay, bruises, etc. All fresh produce, unless otherwise stated, shall comply with the latest standards issued by the United States Department of Agriculture, for the grade specified for each item.
